Today I’m sharing one of my family’s favorite dinners – One Pot Greek (Lemon) Chicken and Rice. Being Greek, I have grown up cooking countless Greek dishes with my family members. Traditional Greek flavors are oh so delicious and usually incorporate just a few simple seasonings and ingredients that blend into yummy goodness ….olive oil, lemon, oregano, garlic, s & p. Need a vinaigrette for a Greek salad? Use those ingredients. A marinade for a lamb or chicken dish? Same ingredients. Of course depending on the dish, the seasoning vary and can become more complex. But these five ingredients make up the foundation of many Greek dishes.
When I stumbled upon this recipe at Recipe Tin Eats, I was intrigued as it uses the same ingredients I am used to cooking with when making Greek food. This blog is full of great recipes using everyday ingredients. It’s an incredibly easy and delicious dish made in just one pot. It’s naturally gluten and dairy free. And add in the fact that it’s made with ingredients usually found in the kitchen. Win-win-win!
I added the emphasis on lemons. Just an aside about lemons. I never realized how much I rely on them, until this shelter-in-place. While others are hoarding toilet paper, cleaning products, and masks, in our home, it’s lemons. About 10-15 per week. But the stores don’t seem to be in short supply, so I feel ok about my lemon hoarding.
